A good cook/ chef/ butcher figures out a way to use everything but the oink. That’s what I basically try to do when making food for myself, my friends and my family. And that’s what this is all about: me trying various things to get the most out of food and drink through cooking, curing and brewing. Thereby respecting what I consume and not wasting it.
